Cotuit oysters from Massachusetts seasoned with local horseradish, Tuscan olive oil, sea salt and cracked black pepper and dressed in a watermelon radish mignonette. Fresh, flavorful and, of course, grit-free.

This time it was whipped rosemary hummus with sumac oil, Persian cucumber tzatziki with beet sprouts, and smoky eggplant tapenade: charred fairytale eggplants steeped in jalapeno, garlic, onions, parsley, basil and Spanish paprika and topped with shaved feta rosa. Served alongside fennel crackers, grilled pita brushed with herbed oil and sesame breadsticks.

Fresh baby shrimp marinated in lime olive oil and lightly dressed with tomato, capers, thin shaved wild onion flower and sea salt to let the shrimp’s sweet, mild flavor really shine.
